just a quick note: although most restaurants now make chirashi with actual pieces of sushi-quality seafood, chirashi used to be, and still is in some restaurants, as a way to get rid of the leftover bits of not-perfectly-cut pieces of seafood which aren't satisfactory for nigiri or maki. the sweetened rice is similar to general "sushi rice" which has added mirin, salt, and rice vinegar (not soy sauce). some people use sugar, but AFAIK that's either because honmirin is too expensive or too hard to get.

eww? it's leftovers from the cut, not leftovers from other people eating it... fish aren't square shaped to begin with, there's bound to be unusable pieces for those perfectly shaped nigiri and sashimi slices. that's what's used for chirashi...
